Lentil Tacos
(Makes 6-8 Tacos)
For the Flatbread Tacos:
1 Box Free and Easy Flatbread Mix
7g Dried Yeast
150ml Warm Water
10ml Olive Oil
For the Lentil Filling:
2 cups Lentils, soaked
1/2 Red Pepper
5 Large Mushrooms
1/2 cup Oats
2 tbsp Ketchup
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/2 tsp Paprika
1/4 tsp Salt
1/2 tsp Black Pepper, ground
Method:
1. Follow the instructions on the back of the Free and Easy Flatbread Mix to create your dough, and leave to rise for 30 minutes.
2. Meanwhile, chop the pepper and mushrooms and sauté until softened. Leave to the side to cool.
3. In a blender or food processor, blend the oats to create an oat flour. Add the pepper, onion, lentils, ketchup and seasoning, blending until well combined.
4. Separate the Flatbread Mix into 6-8 balls. Roll one out and heat in a frying pan.
5. Once both sides have been cooked, spread the lentil mixture on top, then flip the flatbread and cook for 3-4 minutes.
6. Remove from the heat and add any salad you fancy, fold the flatbread and enjoy!
